Quick Summer Burritos
Ingredients: (serves 2-3)
- 1 lb groud beef
- 2 cups shredded monterrey jack cheese
- 1 cup salsa
- Burrito tortillas

Brown the ground beef, remove from heat, then drain off excess grease. Next stir in the cheese until it starts melting and then stir in the salsa. Warm mixture over med/low heat (don't scald the cheese to the pan, otherwise it's a mess to clean) then scoop onto tortillas and wrap into burritos.
Breakfast Burrito
Ingredients: (Serves 1)
- 1 egg
- 2 Tablespoons milk
- 1/4 cup shredded cheese
- 1/2 cup diced frozen hashbrowns
- 1 Burrito tortilla
- Salsa to taste

Mix the egg and milk in a microwave-safe container, beat until the yolk is well mixed, microwave for 40 seconds (may vary by microwave) until almost completely cooked. Add cheese on top of mixture and microwave for 20 more seconds. Scoop onto tortilla. Microwave hashbrowns for one minute, then scoop onto tortilla. Add salsa to taste. Wrap & you're out the door with breakfast in hand.
